Hickory and mesquite are both types of hardwood with distinct flavors. Hickory has a strong, smoky flavor that is slightly sweet, making it a popular choice for smoking meats like pork and beef. Mesquite, on the other hand, has a more intense and earthy flavor with a hint of sweetness, making it a great choice for grilling and smoking meats like chicken and fish. Additionally, hickory tends to burn hotter and longer than mesquite, making it a better option for longer cooking times. **
